there's an argument that one day all domains will be like this and thus it's better to register them now

Do you want an answer or are you just being rhetorical?

I decided to go with a country TLD instead (.li) because it has been around for decades.

I mainly wanted to use it for personal email, and I heard that gTLDs activate spam filters very easily.

If anything, all these new TLDs will just raise the value of .COM/.ORG the way the iPhone became prestigious after thousands of copycats entered the market. No one cares that .SOFTWARE is more descriptive or even easier to remember. It's all about the look.
