Evolution shows that
1.Plants that lose their seeds to predators don't survive.
2.Plants that are toxic enough to deter predators survive.
3.Plants which lose parts of their non-seed content can survive.
4.Therefore plants will invest most of their defense towards seeds, their future genes.

If evolutionary pressure to deter predators concentrates to avoid seed predation - it means all plant seeds need to be toxic or contain chemicals to disable predators(hallucinogens, drugs, xenoestrogens, protein inhibitors, digestion stopping compounds,etc) or cost them some unacceptable health loss to lower seed loss. Its a zero-sum games and losers are eaten.

Seed predator insects/birds/animals can have countermeasures by evolving defenses to disable these compounds in seeds, but human evolution has stopped because natural selection was replaced with pure sexual selection and medicine, since about the start of agriculture and city-states.

We're not adapted to current seeds, only some resistance perhaps to seeds before anatomically modern humans appeared.
Animal tests of seeds would show them harmless, they're evolutionary adapted.
All current diet is based on grains/seeds and animals fed with them...
