I apply to several different jobs I'm not qualified for to see if I can fake my way in. I either drop the process if it involves an exam (since I'm not qualified, I wouldn't be able to answer it), or if I actually manage to get in, in which case I call the whole thing off, much to their chagrin.

I always do. job requirements are usually artificially high because of wishful thinking about a perfect candidate. that's why they often want you to have long experience with the extremely specific tech stack they use. their're are also often made by people completely clueless about the problem domain their're are hiring for: IIRC the dude who made node once found a job posting which required 10 years of node experience, which at the time even he didn't have.
