Let's write a random generator of rap. The only requirement is that it's relatively grammatically correct and produces text that rhymes. It doesn't have to have a large vocabulary, obviously, so is obviously doable.

Make it so that it'll rhyme loosely-related words instead of always being 100% rhyming (like cat and hat), because that increases the possibilities greatly.
Also, you might want to analyze some rap lyrics or brush up on music theory to learn about different rhyme schemes. Rap isn't just rhyme x with x and then y with y, you can change it up or even do xy xy or limerick-esque shit.
Additionally, you'd have to calculate the number of syllables in each word.
